We adore this wine, and believe it clearly illustrates the potential for Cabernet Sauvignon here at Cedarville and in this area of the Sierra Foothills.  The mountainous growing areas of Napa Valley, similar to our mountains here, have been our inspiration for style since we set out to make serious Foothill Cabernet Sauvignon. Since planting our Cabernet Sauvignon vines in 1997, and the harvest of our first Cabernet grapes in 2000, we've been tinkering with the vineyard, fine tuning our grapevine canopy and dramatically reducing our crop loads.We've been tinkering in the winery too, experimenting with fermentation techniques, various barrels, and ripeness levels. We think that everything came together beautifully in the 2004 vintage. 

This wine has a big, spicy Cabernet Sauvignon nose, dark fruit flavors of blackberry and cherry, rich texture, pretty oak, and balanced acidity. It is ripe and fruity, but it's not a fruit bomb. Like so many of our wines, it has the ripeness and fruit to be enjoyable now, and the structure to age in the cellar if that's your preference. It's 100% Cabernet Sauvignon, 100% delicious.
