Our goal with Cabernet Sauvignon is to show the potential of this grand grape here in Fair Play. To us, it seems like the ultimate winegrowing challenge. Why? Because of the incredible amount of hand labor and the low crop yields required to properly ripen and tame Cabernet's tannins in a mountain vineyard like ours. We're very pleased with our progress with Cabernet Sauvignon, and we hope you agree.
The 2003 Cabernet Sauvignon is built along the same lines as our 2002, but has a lot of flavor in common with our 2001. Tasting the 2001, 2002, and 2003 side by side, we're struck by the purity of fruit in the 2003. The 2003 fruit is as bright as the 2001, the texture as thick as the 2002, and the finish is definitely the longest of all three. Our tasting notes include words like juicy black cherries, cranberries, cloves, nutmeg, sweet soft tannins, and a long finish. If you have enjoyed our previous vintages of Cabernet Sauvignon, we're certain you'll be enamored with this one!
