Cabernet Sauvignon is the king of red wines and is
one of our appellation's best kept secrets. Mountain grown Cabernet
Sauvignon from El Dorado delivers intense flavors and attains
fine balance without the need to blend with Merlot, or any other
variety. So, ours will be 100% Cabernet Sauvignon. We planted
our Cabernet vines facing directly south to maximize the fruit
character which our unique terroir will allow us to obtain.
Planted in 1997, our Cabernet Sauvignon vineyard is made up
of the See Ranch Clone (now Silverado Vineyard) and 337 from
the Medoc (Bordeaux). The vines are trained to a quadrilateral
cordon to control vigor and with a lyre structure to support
shoot growth and provide even sun exposure. The name lyre is
derived from the ancient harp-like Greek musical instrument shaped
like a squared-off "U". We harvested our first crop
from these vines in 2000.
